Ethiopian Foods
I wandered into an ethnic grocery in my city without
specific intentions of buying anything and came across engera. It's a bread like pancake made from TEFF, a special grain grown in Africa, and now in the USA. It's fermented, mixed with oil/water and then fried. It tastes like sweet sourdough bread and has the shape/consistancy of a large pancake. I taste a molasses like flavor, although there is none in the mix. It must be refrigerated after purchase and is sold in the refrigerated case. It can be warmed before eating if desired. I think I've found a new special food. It's delicious. It has properties that may be of value for those with celiac disease, because of its low gluten content. It also shows promise for diabetics in controlling blood sugar. It has a high mineral content. I was driven to learn more about it. Go here: www.ethnomed.org/cultures/ethiop/teff.html |

New food
Sounds like something better than usual for cattle
grown for beef eating! Can we hope? 8) Actually, my recent am glucose readings have been 113 and 117, since I've been on this pH balancing program. They're usually much higher. Something's working right Thanks, JPS!
