Scrumptous Tomato/Dill Soup
I had this at a party last weekend and Everyone loved it!
Tomato/Dill Soup 1 - 28 oz can diced Tomatoes 12 to 16 oz V-8 Juice [your choice] 1/4 cup sugar [or a bit less] or Splenda/Stevia equivalent 4 Tbsp heavy cream 1 Tbsp chopped Dill Mix above ingredients in a large pot, Simmer for 30 minutes. Just before serving add a healthy handfull of Shredded cheddar cheese. Stir lightly. Serve very warm, but not hot-hot. Finely cut Basil may be substituted ofr the Dill. Great for Vegetarians too, as there's no meat or meat broth in it. Enjoy!!!!!!!!!

My family love slightly sourish soup to go with rice. It's just very appetising. My tomato soup is very simple. I use fresh tomatoes, remove the seeds and chop them up. Add into chicken stock and boil for a while. Beat an egg and pour into it and stir. It creates a flowery effect. Season to taste and add chopped spring onions for garnishing. For a more elaborate soup, you can add in diced soft tofu or Japanese seaweed. That makes my day.
