Saved's greek style potato salad
Use red potatoes and boil or cut and boil to desire.
In a small food processor, add 2 egg yolks, a large garlic clove (or 2 ) and 1 dopr of olive oil. Start processing, after 30 seconds, add olive oil slowly (or use a mix of olive / walnut oil). After a couple tablespoons are added alternate with lemon juice and oil until desired thickness. Cut up an onion and a peeled cucumber and mix all together add salt and pepper. High fat, but good fat.
