Question St. Paddy's Day corned beef question!

I know the directions for corned beef say to simmer it in water, but we're having
so much rain and too cool weather, that I thought of baking it in liquid in a slow
oven just to warm the place up more and try to lessen the dampness.
I'll add carrots, potatoes, onions too.
Has anyone ever fixed a corned beef in an oven or a crock pot?

Yes, slow cook it on low or in a 210 degree oven for 6 - 8 hrs

We always use the oven. Some of the veggies can be out of the water, we put in small whole potatoes, small whole onions, cabbage and carrots, temp around 325 until everythings cooked down and tender.

Thanks Saved1986 and Kind2C - just what I needed to know.
I don't fix corned beef very often but at $1.19 per pound was too good
to pass up. I actually love corned beef but usually buy it sliced from the
Deli which is never as good as home made.

Earlybird, you need to get to cleveland to a jewish deli called corky and lennies, also the superior deli and bennie shapiros. Best corned beef and pastrami on the planet! (OH, you do pay for it also)
