I drink RO water as well. It is slightly acidic (6.8) but I make up for that by taking alot of supplements, such as potassium, calcium, magnesium, that will easily neutralize the acidity.
It also helps to avoid coffee and sodas..

Not much for bioavailable minerals in tap water, but I do agree with you on everything else. I do use concentrace minerals.
Most minerals in your tap water will be removed by a sediment filter. Not exactly fine enough to be adsorbed by your system.
Furthermore, not all the minerals in your tap water are desirable, and if your eating a balanced diet, the 'good' minerals being removed are insignificant.
Tap water as a source of valuable minerals is the argument used by those who feel added fluorine is a health benefit.
I wouldn't drink soda pop if it was given to me, which it is on occasion.
I've started cold brewing my organic, shade grown coffee. If you drink coffee, I recommend you give it a try. You can cold brew with no special equipment to see if you like it. Give it a few tries, because it is different, but I think you'll find it better. The flavor is more complex due to the volatiles not being lost during the hot brew, and it is less acidic too, adding a benefit to taste and reducing acid consumption.
