I'm not sure I understand or maybe it's my ignorance, but I wasn't aware there was GMO chicken? GMO as far as I'm aware is crops and they were talking about fish. Unless I'm mistaken maybe you meant to write chicken that is feed on GMO soybeans versus ones that do not eat GMO soybeans? Because I don't believe GMO chicken is on the market at least in the USA, but maybe that's new to me.
I think anything fresh is probably better. I believe many manufactors soak the chicken in salt and some even in sugar for both to preserve and make the chicken last long as well as taste.
