Going by Weston A. Price/Mary Enig/Sally Fallon standards:

1. If I can't find organic, raw, non-pasteurized milk from grass-fed cows what are the next best milk substitutes? Please list two or three.

2. If I can't find organic non-pasteurized butter from grass-fed dairy, what are the next best butter substitutes? Please list two or three.

3. If I can't find organic non-pasteurized cheese from grass-fed dairy, what are the next best cheese substitutes? Please list two or three.

4. Is lamb a good substitute to beef? If so, what all should one look for when buying lamb?

5. What are the healthiest organic lunch meats (ham, turkey, salami, etc.)?

The best substitute for the milk would be goats milk.
There is no 'safe' lunch meat.....the sodium nitrate to preserve them is unsafe....same with bacon, sausage, hot dogs, ham, etc. Lunch meat is a 'processed' food...stay away!
