Default Coffee and ??????

What do you serve to friends when you invite them for afternoon coffee (or tea, juice, whatever)? Traditionally it's cookies, pasteries or something sweet, but I'm looking for some healthy alternatives to give my friends. Most of them would probably prefer the sweet, but I feel guilty knowing that it's not good for them. I would really appreciate some ideas.

How about cheeses, crackers, carrot and/or carrot sticks with a healthy homemade dip? Add broccoli, cauliflour,(sp) etc. Try to use the organic cheeses and whole wheat crackers.

Here are a couple of recipes from doug kaufmanns anti fungal diet cookbook...

Wahoo Cheesecake
12 ounces cream cheese
2 eggs
1 tablespoon fresh lemon juice
1/2 cup heavy whipping cream
2 tablespoon of cinnamon
stevia to taste (go sweeter then you mght think)
Microwave cream cheese for 15 seconds to make it easier to mix without making lumps. In a large mixing bowl, combine cream cheese, lemon, stevia and 1 egg. Stir well until blended and as lump free as possible. Add next egg and mix thoroughly. Fold in whipping cream until just mixed.. do not over beat.. Pour into crust (see nutmeal pie crust recipe) To use a springfoam pan, increase the recipe by about half, or you will end up with a very flat cheesecake. For a creamier cheesecake, bake using a water bath. Do so by placing the cheesecake filled pie pan in a larger pan (a roasting pan would work) Fill the larger pan with water until it reaches halfway up the sides of the cheesecake pan.Bake at 350 degrees for 35-40 minutes, or until a toothpick inserted comes out clean. Remove from oven and cool to room temperature. Then chill for at least 2 hours. The top will crack while cooling. Serve with sliced strawberries or other fresh fruits

Nutmeal Pie Crust
2 cups of walnuts (or other nuts)
3 tablespoons of butter
2 teaspoons cinnamon
stevia (optional)
Pour nuts into a grinder or food processor, and make them very fine. Combine with remaining ingredients, pat into pie pan and bake at 350 degrees for 12 minutes.. (makes one 9 to 10 inch crust

Frosted Pecan Bites
1 pound pecan halves
1/2 cup of butter
1/4 cup of powdered stevia
2 egg whites stiffly beaten
1 pinch of salt
preheat oven to 275 degrees. Bake pecans for 10 to 15 minutes or until lightly toasted. set aside to cool. Fold stevia, salt and pecans into egg whites. Increase oven temperature to 325 degrees. Melt butter on a baking sheet. Spread the nut mixture evenly over the pan and bake for 30 minutes stirring every 10 minutes. Remove from oven and cool...
makes 6 servings (6 cups)
Also he had a recipe for baked apples. I have always tried to have a veggie tray or a good fruit salad along with the junk food when we have parties. It seems the veggie trays go faster then the junk food around here!!

Mari,

That's sweet of you to consider - the health of your friends.

If you'd like to make something sweet, but also low in sugar, perhaps you can find a recipe on this site: https://www.genaw.com/lowcarb/dessert_recipes.html

Some of the recipes call for a sugar alternative. I try to use stevia whenever I can.
