I'm trying to get more way of getting EVOO in my diet as I rarely get olive oil in my diet, except when I have subs or a salad every now and then. My wife isn't a big fan of salads, so I'm trying to figure out ways of getting olive oil in my diet on a regular bases.
When we were in the mediterranean the pizza all came with this Spicy chilli oil sauce that they drop on the table that looks just like the picture below. It's basically peppers that have been sitting in oil and you pour a little bit of it on your pizza and it makes it absolutely amazing. We probably eat pizza more often than we should, once a week or once every two weeks and we're thinking about making this to get a little bit more oil in our diet. Any suggestions on other ways of getting a little bit of olive oil in our diet on a daily bases?

Make an aoili or mayonaise with olive oil, pour it over salads, dip bread in it. Make a lentil soup and the last 5 minutes of cooking, add a fair amount of it.
Use it to make garlic "butter". Of course, it is better with butter, but olive oil works nicely. Just add minced garlic and parsley to the heated oil (microwave works). Then make spaghetti. Grate some misithra or other hard grating goats cheese over the spaghetti. Then dribble the garlic oil over the spaghetti melting the cheese in the process. Actually, spaghetti is good with just oil dribbled over it.

I'm really not a fan of mayonaise and wasn't familiar with aoili. So I googled it and it seems to be popular in Spain, ironically as it sounds I've been to Spain 5 times and probably spent in total a few months there and have family still still and I've never heard of it. Looks like aoili is nice for salads and as a fish sauce, so I'll look into it
I love dipping bread in olive oil, but I end up eating so much bread that I think the health aspect disapears.
I like to slice yukon gold potatoes, coat with pepper and sea salt and fry in olive oil. If I want a quick 'homemade' spagetti sauce, I saute some chopped onions and crushed garlic with italian seasonings in olive oil until everything is soft, then add a couple of cans of organic tomato sauce and let simmer. It's also good with spices/chives over boiled potatoes or steamed vegatables. I've had good results using 'light' olive oil in cake mixes/recipes.

I drizzle cold pressed extra virgin olive oil (EVO) over my food at table. This enriches soup, stew, casserole, grain dishes, vegetables, or bread. I use olive oil when I make mayonnaise. I endeavor to consume at least a teaspoon of uncooked olive oil each day.
I live in an arid environment, high desert. Consuming raw olive oil helps keep my skin from being dry. EVO is also supposed to be helpful in lubricating joints, and helpful in preventing plaque from building up in arteries.
I like the olive oil body products made by Kiss My Face. There is an olive oil face wash, which is quite nice. I like the bath soap and lotion, too.
Way back when I first purchased olive oil in came in a wooden barrel and it was green and it smelled like olives. I have a hard time finding the quality and I ve actually had to return several bottles because when I opened them they were rancid.,, including Whole Foods label. I've switched to Napa Grapeseed oil and Tropical Traditions coconut oil.

JFH in the house, I completely forgot about that. I have not done it in yrs, but will this week. Take equal parts olive oil and butter in a food processor and a couple cloves of garlic. Whicp it up, makes a great spread (and I remember one drunk night pulling out the tortilla chips and eating it straight ot of the container). As for brands of olive oil, I try different ones, usually from the Italian store or lebanese/greek stores. The EVOO at the super market is not that great.
many great idea on how to use olive oil, which seems like garlic is very common in most of the recipes, which luckily I love garlic. It's easy for me to consume certain things on a daily bases, but a lot of these things I think are for certain meals or what have you. Seems like maybe I'm just going to have to get my wife to start enjoying salads.
The aoili seems to have a few recipes, which seems like if you want to put it on a salad you can just mix olive oil and garlic and thin it out for a salad and add eggs to make it thick for a sauce on fish, pasta and even sandwiches. All this talk is makig me hungry
I usually buy the two-pack Kirkland organic olive oil (Costco house brand). The color is more of a deep gold than green. The label says the olives are from Spain, Italy and Portugal and that the olive oil is packed in Italy. Luckily, I have not had the misfortune to open a bottle of rancid oil. Yuck!

I've seen a few oil fields in spain and I remember a few years ago reading that Italy actually imports almost all of their olives from Spain and then actually sell them as a product of Italy.
I'm a big fan of costco, which is where I get my almonds from as well as my green tea. I don't have a trader joe's next to me and whole foods we call whole paycheck.
I've been impressed with their quality, so I'll give the olive oil a chance next time I'm there.

Whole paycheck is right. I would try a lebanese / middle east store also, sometimes they have some good deals.
There is a chain of stores called Vitamin Cottage. I think they origininated in Colorado. I don't know how widely disbursed they are throughout the US. They have a store in Albuquerque. There are good prices on many items, and they frequently put items on sale. They have some fresh organic produce, dairy items, and a lot of bulk packed dry goods. They have a few meat and frozen food items. They have a mix of conventionally grown and organic grocery items. They predominantly specialize in vitamins, supplements, and herbs. Although they don't have the wide range of items Whole Paycheck carries, I have switched to shopping at the Vitamin Cottage because I can stretch my dollars a lot farther at this store.
Costco has a new policy (as of two years ago I think) to increase the number of organic products they carry. One has to really keep one's eyes open when cruising the aisles to be able to spot the new organic items they keep adding to their stock.
