Default No-bake chocolate pumpkin pie

I'm not saying this is healthy. But good for your mood.

Here you go. Just in time for Thanksgiving.

  • 15 oz pureed pumpkin (or 1 can)
  • 1 tsp pure vanilla extract
  • 1-2 tsp cocoa powder
  • level 1/4 tsp salt
  • 1 cup chocolate chips
  • optional: sweetener (Taste first. I thought it was sweet enough without additional sweetener.)
Melt the chocolate (either on the stove or in the microwave), then throw everything into a food processor and blend until it is super-smooth. Pour into a pie crust and fridge until chilled. This pie gets firmer and firmer, the longer it sits.

Possible Crust:
9 oz (250g) graham cracker
7 tbsp (100g) salted butter, melted
In a food processor pulsate the crackers until nice and crumbly, add the melted butter and give a few pulses until mixed thoroughly.
Put the crust mix into a springform cake tin (I used 8�) and press firmly to create an even layer. Chill in the fridge while preparing the cheesecake mixture.

Sounds good... Will have to give it a try... I think it might go good with other things too... perhaps apple... or cherry....

Although I'm a bit confused by the last part... "cheesecake" mixture...? This is a pumpkin "cheesecake"??? Although, that might be an idea... Make a pumpkin cheesecake... Who knows... It could actually be pretty good...

The recipe did not come with a no-bake pie crust. I had to find one - copy and paste.

Ah OK.. LOL

Hmmm, a no bake Pumpkin Pie mix didn't come with a no bake pie crust... That seems a little weird to me..

Why would I want to bake the pie crust if I'm not baking the pie? Isn't that sort of the whole point? Oh well...

Still a good idea for a recipe and sounds tasty, and just for the record.. Nope.. Not really healthy, but hey, we don't eat things like that everyday! So, we can afford to eat something like this once in a while.. Just remember to not over do it
